Summer has come to an end and Fall has arrived, which means more festive drinks and desserts are coming among us. With this a very popular flavor that is common during fall is pumpkin. Making this pumpkin roll is sure to get you eager for the fall season ahead of us.
Ingredients
– 3 large eggs (beaten)
– 1 cup of white sugar
– ½ of a teaspoon of ground cinnamon
– ⅔ of a cup of pumpkin puree
– ¾ of a cup of all-purpose flour
– 1 teaspoon of baking soda
– 2 tablespoons of butter (softened)
– 8 ounces of cream cheese
– 1 cup of powdered sugar
– ¼ of a teaspoon of vanilla extract
STEP ONE: Preheat the oven to 350 fahrenheit. Butter or grease a 10 by 15 in a jelly roll pan.
STEP TWO: In a mixing bowl, blend together the eggs, sugar, cinnamon, and pumpkin puree. In a separate bowl, mix together flour and baking soda. Add to pumpkin mixture and blend until smooth. Evenly spread the mixture over the prepared jelly roll pan.
STEP THREE: Bake between 15 to 25 minutes in the preheated oven. Remove from the oven and allow to cool enough until at room temperature.
STEP FOUR: Remove the cake from the pan and place on a tea towel (cotton). Roll up the cake by rolling a towel inside the cake and place seam side down to cool.
STEP FIVE: Prepare the frosting by blending together the butter, cream cheese, powdered sugar, and vanilla.
STEP SIX: When the cake is completely cooled, unroll and spread with cream cheese filling. Roll up again without a towel. After you have created the pumpkin roll wrap with plastic wrap and refrigerate until ready to serve. After sprinkle top with powdered sugar and slice into 8 to 10 pieces
