Victoria Quintana, Kaleidoscope Editor

Craving cold desserts now that warm weather is here? If your answer is yes, then I have the perfect recipe for you to try at home. This mouth-watering lemonade pie is a delicious dessert to enjoy on a warm spring or summer day, and it only calls for four ingredients!

Ingredients

  • 1 prepared graham-cracker crust
  • 6 oz pink lemonade concentrate, thawed (you can substitute with limeade if you prefer)
  • 2 cups softened vanilla ice cream (or frozen yogurt)
  • 8 ounces whipped topping, thawed

* optional: red food coloring

Directions

  1. In a large bowl, stir ice cream and lemonade concentrate together until it’s all one color

* If you want the pie to be pinker, stir in a few drops of red food coloring. (Pro tip: a little goes a long way!)

  1. Gently fold in whipped topping & mix well
  2. Pour mixture into graham-cracker crust (if there’s leftover mixture, you can put it in popsicle molds or small cups with popsicle sticks to save it)
  3. Put pie in freezer until frozen solid (at least 4 hours)
  4. When ready to serve, let pie sit out for a few minutes to slightly soften it
  5. Cut into slices and enjoy! (store leftovers in the freezer to save for later)
